- 1/2 c. butter
- lobster meat
- 1 c. light cream
- 1/2 tsp. nutmeg
- 2 Tbsp. sherry
- 1 Tbsp. flour
- 1/2 tsp. salt
- 2 egg yolks
Directions

1Melt 1/4 cup butter; add sherry, then lobster meat and heat gently.

2In double boiler, melt 1/4 cup butter.

3Add flour and whisk briskly to get rid of lumps.

4Add cream and stir.

5Add salt and nutmeg.

6Mix egg yolks in a bowl.

7Stir about 1/4 cup white sauce into the eggs.

8Mix and return to the pan with remainder of white sauce.

9Stir and cook for 2 minutes.

10Add lobster mix and heat through gently.

11Do not boil or it will curdle.
