- 4 tbsp. butter
- margarine
- 1-1/2 tbsp. flour
- 2 cups cooked lobster meat, cut into chunks
- 1/4 cup sherry
- white wine
- 1/2 tsp. salt
- 1 dash paprika
- 2 egg yolks, slightly beaten
- 1-1/2 cup light cream *
Directions

1In top of double boiler over very low heat, melt butter.

2Stir in flour.

3Add lobster, sherry, salt and paprika.

4In a small mixing bowl, combine beaten egg yolks and cream.

5Add to lobster mixture and blend well.

6Cook over very low heat, stirring frequently, until thickened.

7Serve at once over toast points.
