Low-Carb Lettuce Wraps

- 1/2 lb lean ground turkey
- 1 zucchini
- 1 (8 ounce) can sliced water chestnuts
- 1/4 cp. soy sauce
- 2 tablespoons parmesan cheese
- 1 head butter lettuce
- 1/4 cp. salsa
- olive oil or grapeseed oil
Directions

1finely chop your zucchini and water chestnuts & set aside.

2wash butter lettuce.

3combine turkey, parmesan cheese, & salsa in a bowl.

4once combined, brown turkey slightly.

5add zucchini and chestnuts, also soy sauce.

6{it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.

7once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.

8And -- that's it! Easy, quick, healthy & yummy! I top mine off with a little more salsa {Los Pastores is my favorite!}.
