  • 2 1/4 c. oat bran
  • 1/4 c. brown sugar
  • 1/4 c. chopped nuts
  • 1/2 Tbsp. baking powder
  • 2 medium ripe bananas
  • 2 Tbsp. oil
  • 2 egg whites
  • 1/4 c. dates
  • 1 1/4 c. nonfat milk

Directions

    Mix bananas, oil, egg whites, dates and dry milk in blender. Blend until smooth and mix with dry ingredients.

    Pour into 12 muffin cups and bake at 425° for 17 to 20 minutes.
