- 1 c. all purpose flour
- 3 Tbsp. sugar
- 1-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. buttermilk
- 1/4 c. vegetable oil
- 1 tsp. vanilla extract
- 3 egg whites
Directions

1In a bowl, combine the first 4 ingredients.

2In another bowl, combine buttermilk, oil and vanilla; add to dry ingredients.

3In a mixing bowl, beat egg whites until soft peaks form.

4Fold into batter.

5Pour batter by 1/4 cupfuls onto a hot griddle coated with non-stick cooking spray.

6Turn when bubbles form on top of pancakes.

7Cook until second side is lightly browned.
