  • 1/2 c. honey
  • 2 whole eggs
  • 3 egg whites
  • 1 3/4 c. skim milk
  • 1/4 c. vegetable oil
  • 1/3 c. sugar
  • 2 Tbsp. baking powder
  • 3 1/2 c. all-purpose flour
  • 1 c. yellow cornmeal
  • 1/4 tsp. salt

    In a large bowl, whisk together the honey, eggs, egg whites, milk and oil.

    Add the dry ingredients and mix with an electric mixer at medium-high speed for 2 minutes.

    Spray 2 muffin tins with cooking spray or line with baking cups.

    Fill each cup 3/4 full. Bake at 400° for about 15 minutes or until tops are golden brown.
