- 2 whole eggs
- 3 egg whites
- 1 3/4 c. skim milk
- 1/4 c. vegetable oil
- 1/3 c. sugar
- 2 Tbsp. baking powder
- 3 1/2 c. all-purpose flour
- 1 c. yellow cornmeal
- 1/4 tsp. salt
Directions

1In a large bowl, whisk together the honey, eggs, egg whites, milk and oil.

2Add the dry ingredients and mix with an electric mixer at medium-high speed for 2 minutes.

3Spray 2 muffin tins with cooking spray or line with baking cups.

4Fill each cup 3/4 full. Bake at 400° for about 15 minutes or until tops are golden brown.
