- 3 eggs
- 3/4 c. oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 c. buttermilk
- 1 c. crushed pineapple, drained
- 2 c. grated carrots
- 3 1/2 oz. coconut (1 can)
- 1 c. walnuts, chopped (not too fine)
Directions

1Mix eggs, oil, sugar and vanilla well.

2Combine flour, baking soda, cinnamon and salt.

3Add dry mixture to egg mixture, alternating with buttermilk.

4Then add remaining ingredients and mix well.

5Bake at 350° for 55 minutes.

6Use large pan (9 x 14 x 1 1/2-inches).
