Low-Fat Corn Pudding

Ingredients

  • 2 eggs or Egg Beaters equivalent to 2 eggs
  • 1 1/2 Tbsp. flour
  • 2 Tbsp. sugar
  • 1/2 c. milk or canned skimmed milk
  • 1 (No. 1) can cream-style corn, drained
  • 1 (No. 1) can whole kernel corn, drained
  • dash of pepper
  • 1/2 tsp. salt

Directions

    Mix eggs, flour and sugar with Egg Beaters.

    Stir in milk, corn, salt and pepper.

    Pour into a buttered casserole.

    Sprinkle paprika on top.

    Bake in a pan of water until firm in a 350° oven for 1 hour.

    Can be doubled.

    I use Egg Beaters and canned evaporated skim milk to cut down on fat.
