Low Fat Creamy Spinach

  • 2 cloves Garlic, Minced
  • 1 Tablespoon Olive Oil
  • 2 cups Spinach, Fresh Or Frozen
  • 1/2 cups Part-skim Ricotta Cheese
  • 2 Tablespoons Fat-free Half-and-half
  • 2 Tablespoons Parmesan Cheese, Grated
  • Salt And Pepper, to taste

Directions

    In a large skillet, saute the garlic in the olive oil over medium heat until softened but not browned.

    If using frozen spinach, make sure you squeeze it dry after you thaw it. Add the spinach to the skillet and saute for a few minutes with the garlic. Add the ricotta, half-and-half and 1 tablespoon of the Parmesan cheese. Season with salt and pepper and heat everything through.

    Serve hot and sprinkle the remaining tablespoon of Parmesan on top.
