- 1 c. shredded nonfat Mozzarella cheese
- 1 Tbsp. grated Parmesan cheese
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 2 egg whites
- pepper to taste
- snipped fresh parsley (to garnish)
Directions

1Cook manicotti and drain. Stir mushrooms and spaghetti sauce together. Spread 1/4 of the sauce in a 9 x 13-inch baking dish.
