  • 1 (8 oz.) pkg. manicotti shells
  • 1/4 lb. mushrooms, sliced and sauteed
  • 1 (28 oz.) jar low-fat spaghetti sauce
  • 1/2 tsp. basil
  • 1 1/2 c. nonfat cottage cheese
  • 1 c. shredded nonfat Mozzarella cheese
  • 1 Tbsp. grated Parmesan cheese
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 2 egg whites
  • pepper to taste
  • snipped fresh parsley (to garnish)

Directions

    Cook manicotti and drain. Stir mushrooms and spaghetti sauce together. Spread 1/4 of the sauce in a 9 x 13-inch baking dish.
