  • 1 3/4 c. low-fat baking mix (such as Pioneer)
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • 1/2 c. egg substitute or 2 egg whites
  • 1/2 c. brown sugar
  • 1 Tbsp. vegetable oil
  • 1/4 c. applesauce
  • 3/4 c. milk
  • 3/4 c. of 2 of the following: berries, apples, raisins, nuts, dried cranberries, etc.

    Mix first 8 ingredients. Add milk and mix. Blend in fruit and nuts. Spoon into muffin cups and bake at 400° for 18 to 20 minutes.
