Low-Fat "Refried Beans"

Ingredients

  • 3 cans pinto beans
  • 3 jalapeno peppers
  • 1 medium onion
  • 1 clove garlic
  • 1 Tbsp. oil

Directions

    Finely chop the onion and peppers and mince the garlic.

    Saute in 1 tablespoon oil in a Dutch oven.

    Drain the pinto beans, reserving the fluid.
  4. 4
    Add beans to onion, pepper and garlic and simmer for about 1 hour.

    Mash beans.

    If beans are dry, add reserved fluid.

    Use mixture for burritos, nachos, etc.
