- 1 12 kg king edward potatoes or 1 12 kg maris piper potatoes
- 3 tablespoons avocado oil
Directions

1Heat oven to 200C / 400F.

2Pour oil into a roasting tin and place in oven to heat up.

3Peel potatoes and cut into even sized chunks.

4Cook in a large pan of salted boiling water for 10 minutes and drain.

5In the colander shake the potatoes so they get rough fluffy edges.

6Add potatoes to the sizzling oil, baste and roast for 50 minutes, turning twice.
