  • 1 12 kg king edward potatoes or 1 12 kg maris piper potatoes
  • 3 tablespoons avocado oil

Directions

    Heat oven to 200C / 400F.

    Pour oil into a roasting tin and place in oven to heat up.
  3. 3
    Peel potatoes and cut into even sized chunks.
  4. 4
    Cook in a large pan of salted boiling water for 10 minutes and drain.

    In the colander shake the potatoes so they get rough fluffy edges.
  6. 6
    Add potatoes to the sizzling oil, baste and roast for 50 minutes, turning twice.
