Low-Fat Spinach Stuffed Shells

- 1 (10 oz.) pkg. frozen spinach, thawed and water squeezed out
- 1 1/2 tsp. minced garlic (in jar)
- 1/3 c. Parmesan cheese (Weight Watchers fat-free Parmesan)
- 1 egg, beaten or 2 egg whites
- fat-free Mozzarella cheese (Healthy Choice is best)
- 12 to 15 jumbo shells
- 1 c. low-fat cottage cheese
- 1 Tbsp. lemon juice
- 1/2 tsp. oregano
- 2 c. spaghetti sauce (Healthy Choice or marinara sauce)
Directions

1Boil shells until firm but tender.

2Drain and rinse in cold water.

3Mix drained spinach, cottage cheese, garlic, lemon juice, Parmesan cheese and oregano.

4Stir in the beaten egg.

5Stuff the shells with the mixture and place in a baking dish sprayed with cooking spray.

6Top shells with spaghetti sauce and finally, the cheese.

7Bake at 350° until all is hot and the cheese melted, about 20 minutes.
