- 1 cup sugar
- 1 egg
- 12 teaspoon vanilla extract
- 1 14 cups unsweetened crushed canned pineapple, with juice, pureed
- 1 cup flour
- 1 teaspoon baking soda
- 12 cup walnuts, finely ground
Directions

1Preheat oven to 350F.

2Grease and flour one 9 inch baking pan.

3Puree the pineapple with its juice in a blender or with a handheld blender.

4Chop walnuts in a food processor.

5Sieve flour and baking soda and ground walnuts.

6Combine eggs, sugar, and vanilla in a deep mixing bowl.

7Beat with electric mixer on high speed until light in texture.

8Add pineapple and mix well.

9Add flourmixture and blend until combined, do not overmix.

10Pour into prepared baking pan.

11Bake 30 minutes, or until tester comes out clean when inserted in center.

12Cool on wire racks 15 minutes before removing from pan.
