  • 4 whole Skinless Chicken Breasts
  • 23 cups Chopped Carrots
  • 1/2 cups Chopped Red Bell Pepper
  • 1/2 cups Chopped Green Bell Pepper
  • 2- 1/2 cups Low Sodium Chicken Or Vegetable Broth
  • 1- 1/2 cup Canned Pineapple Tidbits, Undrained
  • 13 cups Ketchup
  • 2 cloves Garlic
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Reduced Sodium Soy Sauce
  • 2 Tablespoons White Vinegar
  • 1- 1/2 cup Uncooked Long Grain Brown Or White Rice

    Cut the chicken into cubes.

    Chop the carrots and peppers.

    Spray a large saucepan with non-stick spray.

    Add the chicken cubes to the pan over a medium-high heat and cook until no longer pink.

    Add the remaining ingredients.

    Do not drain the pineapple.

    Stir well.

    Bring to a boil.

    Then reduce heat to medium-low.

    Cover and simmer for 20-25 minutes, until rice is tender.

    If using brown rice, make sure it is the quicker-cooking type (not instant).
