Ingredients

  • 1 c. vinegar
  • 1 1/2 c. sugar
  • 2 Tbsp. kosher salt
  • 1 tsp. celery seed
  • 1 tsp. mustard seed
  • 7 c. small cucumbers, washed and sliced
  • 2 c. onions, chopped
  • 1 c. green peppers, chopped
  • 1 c. red peppers, chopped

Directions

    Put the first 5 ingredients in a saucepan.

    Bring to a boil for 5 minutes.

    Let cool.

    In a large bowl with lid, put remaining ingredients.

    Pour vinegar mixture over cucumbers, peppers and onions.

    Seal with lids for one hour at room temperature.

    Put in jars with lids and keep in refrigerator.

    Wait 10 days before eating.

    They will keep for a year or longer.

    Makes about 1 1/2 quarts.
