- 1 lb. skinless, boneless chicken breast
- 2 Tbsp. vegetable oil (or enough to cover bottom of pan)
- 1/2 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. butter or margarine, microwaved to melt
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped red pepper
- 2 Tbsp. brown sugar
- 1 c. ketchup
- rice
Directions

1Chop chicken into bite size chunks.

2Heat oil in pan.

3Mix flour, salt and pepper.

4Dip chicken in melted butter, then flour mixture.

5Brown chicken.

6Mix wet ingredients and vegetables.

7Add to chicken; simmer 30 minutes.

8Serve over rice; garnish with green and red pepper slices.
