  • 1 lb. skinless, boneless chicken breast
  • 2 Tbsp. vegetable oil (or enough to cover bottom of pan)
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. butter or margarine, microwaved to melt
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped red pepper
  • 2 Tbsp. brown sugar
  • 1 c. ketchup
  • rice

    Chop chicken into bite size chunks.

    Heat oil in pan.

    Mix flour, salt and pepper.

    Dip chicken in melted butter, then flour mixture.

    Brown chicken.

    Mix wet ingredients and vegetables.

    Add to chicken; simmer 30 minutes.
