- 1 lb. black beans
- 1 Tbsp. salt
- 2 green peppers
- 1/2 tsp. oregano
- 1 bay leaf
- 2 Tbsp. sugar
- 10 c. water
- 1/2 tsp. pepper
- 1/2 c. olive oil
- 1 large onion
- 4 cloves garlic
- 3 Tbsp. red wine vinegar
Directions

1Rinse beans and soak with one green pepper.

2When beans swell, cover and cook in the same water until soft.

3Add oil, minced garlic, chopped onion and 1 cup of beans, mashed, and second green pepper.

4Add salt, pepper, oregano, bay leaf and sugar; boil for one more hour, covered.

5Add red wine vinegar and cook slowly for the last hour.

6Simmer, uncovered, until desired consistency.
