- 2 lb. zucchini
- 1 Tbsp. butter
- 1/4 c. sour cream
- 1 Tbsp. grated cheese
- 1/2 tsp. salt
- 1/8 tsp. paprika
- 1 egg yolk, beaten
- 1 Tbsp. chives
- 1/2 c. cracker crumbs
- 2 Tbsp. melted butter
Directions

1Cook and drain zucchini.

2Place in a greased 1 1/2-quart casserole dish. In skillet, melt butter, add sour cream, cheese, salt and paprika.

3When cheese is melted, remove from heat and add egg yolk and chives.

4Pour over zucchini.

5Sprinkle bread crumbs on top, then bake at 350° for 20 minutes.
