- 3 to 4 slices bacon, diced
- 1 c. frozen Southern hash brown potatoes
- 1/4 c. chopped onion
- 6 eggs
- 1/3 c. water
- 1/2 tsp. salt
- 1/2 tsp. dill
Directions

1In a large skillet, over medium heat, cook bacon until crisp. Put on paper towels to drain.

2Pour off all but 3 tablespoons of drippings.

3Add potatoes and onions.

4Cook, stirring occasionally, until potatoes brown, about 5 minutes.

5Beat eggs with water, salt and dill.

6Stir in bacon.

7Pour over potato mixture in skillet. Cook, stirring occasionally, until eggs are cooked, but still moist.

8Makes 6 servings.
