- 2 Tablespoons Salt (per 4 Cups Of The Soaked Beans)

1Dry Lupini beans can be difficult to find.

2I found them at a local Italian Market.

3They look like oyster crackers when dry.

4You want to rinse them, then soak the beans overnight in a cold place adding enough water to cover the beans.

5The next day, drain them and then boil them for about 1 hour in fresh water.

6Then drain, cool, and cover with water again and let them sit for 7-10 days, CHANGING THE WATER ONCE A DAY.

7This step is very important because these beans are very bitter and can be toxic if they are not soaked properly.

8Fresh water each day is essential to draw out the bitterness.

9Put them in a cool place for this.

10I keep them in the basement; it doesnt have to be a refrigerator.

11After about a week, test them to see if they are bitter.

12When they are no longer bitter, put them in smaller containers and add plenty of salt (about 2 Tablespoons for 4 cups of beans or to taste).

13These beans more than double in size, so you will have more than you think.

14You can use any amount of beans, I just said 5 cups because that is how they were packaged where I bought them.

15Eating them is fun because you pop the bean out of is shell, and only eat the inside.
