- 1 c. onion, sliced
- 1 c. green pepper, chopped
- 1 c. mushrooms, sliced
- 1/2 lb. potatoes, sliced
- 1 c. carrot, thinly sliced
- 1/3 c. brown rice, raw
- 1 c. zucchini, sliced
- 3 1/2 c. stewed tomatoes, mashed
Directions

1Saute onion, green pepper and mushrooms.

2Place sliced potatoes in bottom of a 2 1/2-quart nonstick baking dish. Alternate layers of carrot, rice, onion mixture and zucchini. Stir seasonings into mashed tomatoes and pour over vegetables.

3Cover and bake at 350° for 2 hours.
