- 1 c. sugar
- 1 1/4 c. water
- 1 Tbsp. oleo
- 1/4 c. cornstarch
- 3 Tbsp. cold water
- 6 Tbsp. lemon juice
- 1 tsp. grated lemon peel
- 3 egg yolks
- 2 Tbsp. milk
- 1 egg white, stiffly beaten
- 1 baked pie shell
Directions

1Combine sugar, water and oleo.

2Cook until sugar dissolves. Add cornstarch that has been blended with cold water.

3Cook slowly until clear, 8 minutes.

4Add lemon juice and grated peel.

5Cook 2 minutes.

6Slowly add the egg yolks beaten with the 2 tablespoons of milk.

7Bring to a boil.

8Cool.

9Fold the egg whites into filling.

10Pour into pie shell and top with meringue.
