Ingredients

  • 3 carrots Large, grated
  • 13 tablespoons Best Foods(R) Real Mayonnaise dollops
  • 1 7/16 cups wholemeal flour self-raising
  • 15/16 cup plain flour sieved
  • 1 teaspoon bicarbonate of soda
  • 2 15/16 cups caster sugar
  • 4 eggs medium
  • 6 3/8 tablespoons walnuts chopped, optional
  • 2 teaspoons cinnamon
  • 3/4 cup cream cheese
  • lemon zest of half
  • 1 1/2 tablespoons powdered sugar to taste

Directions

    Pre-heat the oven to 170°C for 50-60 mins.

    Place all cake ingredients in a mixing bowl and beat together until well mixed.

    Spoon into a greased and lined 22cm round cake tin and bake in the oven for 35 min.

    Cool on a wire tray. Mix all the icing ingredients together and spread over the cold cake.
