- 3 carrots Large, grated
- 13 tablespoons Best Foods(R) Real Mayonnaise dollops
- 1 7/16 cups wholemeal flour self-raising
- 15/16 cup plain flour sieved
- 1 teaspoon bicarbonate of soda
- 2 15/16 cups caster sugar
- 4 eggs medium
- 6 3/8 tablespoons walnuts chopped, optional
- 2 teaspoons cinnamon
- 3/4 cup cream cheese
- lemon zest of half
- 1 1/2 tablespoons powdered sugar to taste
Directions

1Pre-heat the oven to 170°C for 50-60 mins.

2Place all cake ingredients in a mixing bowl and beat together until well mixed.

3Spoon into a greased and lined 22cm round cake tin and bake in the oven for 35 min.

4Cool on a wire tray. Mix all the icing ingredients together and spread over the cold cake.
