Lychee And Lime Rice Pudding

- 3/4 cup milk
- 1 1/4 cups coconut milk
- 1/2 cup palm sugar or packed brown sugar
- 2 tsp vanilla bean paste or vanilla extract
- 1/2 cup medium grain rice
- 1 tbsp finely grated lime peel
- 1 can (20 oz) lychees, drained
- 1/4 cup fresh mint leaves
Directions

1Place milk, 3/4 cup of the coconut milk, sugar and vanilla in a medium saucepan on high heat. Bring to a boil.

2Gradually add rice. Reduce heat to low and simmer, stirring, 35-40 mins, until rice is tender. Stir in lime peel.

3Divide rice pudding among serving bowls. Top with lychees, remaining 1/2 cup coconut milk and mint leaves.
