Ingredients
- 1 medium chicken (3 to 4 lb.)
- 1 medium onion, diced
- 1/2 stick butter or margarine
- 1 can cream of celery soup
- 1 can cream of chicken or mushroom soup
- 1 (16 oz.) pkg. Pepperidge Farm cornbread or herb stuffing
- 1 c. grated Cheddar cheese
Directions

1Boil chicken until done; skin and debone, reserving chicken broth.

2Shred or cut into small strips.

3Saute onion in the butter until soft and clear.

4In a large casserole, layer some of the onion mixture, chicken and 1/2 of the package of stuffing.

5Mix the can of celery soup and 1 can of broth.

6Pour over the first layer of chicken casserole.

7Layer another layer of onion, chicken and the rest of the stuffing.

8Mix the remaining can of soup with 1 can of broth; pour over the casserole.

9Bake, covered, for about 30 minutes at 350°.

10Uncover; top with grated cheese and bake an additional 15 minutes, or until cheese melts.

11Serves 8 to 10.
