Macaroni Casserole

Ingredients

  • 8 oz. box macaroni
  • 1 bell pepper, chopped
  • 1 can water chestnuts, sliced
  • 2 cans mushroom soup
  • 1/2 c. grated cheese
  • 1 can pimentos, chopped
  • 1 large onion, chopped
  • 1/2 c. mayonnaise
  • saltines
  • margarine or butter
  • salt and pepper to taste

Directions

    Cook macaroni; mix all ingredients except margarine and saltines.

    Pour into 1, 2 or 3 casserole dishes.

    Top with buttered saltine cracker crumbs.

    Refrigerate overnight; bake in moderate oven at 370° for 45 minutes.

    This can be frozen without the topping.

    Thaw in refrigerator; add topping just before baking.
