Macaroni-Cheese Puff

  • 1 1/2 c. small elbow macaroni
  • 1 1/2 c. skim milk
  • 1 1/2 c. shredded American cheese (6 oz.)
  • 3 beaten egg yolks
  • 1 c. soft bread crumbs (1 1/2 slices bread)
  • 1/4 c. chopped pimento
  • 2 Tbsp. chopped green onion
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 tsp. salt

Directions

    Cook macaroni in boiling, salted water until tender.

    Drain. In saucepan, combine milk, cheese and salt.

    Stir over low heat until cheese melts.

    Stir about 1 cup of the hot mixture into egg yolks.

    Return to hot mixture in saucepan.

    Blend well. Stir in macaroni, bread crumbs, pimento and onion.
