- 4 egg whites
- pinch of salt
- 3/4 c. 10x sugar
- 1 1/2 c. flaked coconut
- 1/2 c. blanched almonds, chopped
- 2 Tbsp. flour
- 1 tsp. lemon rind (optional) or 1/2 tsp. almond extract
Directions

1Beat egg whites with salt until soft peaks form.

2Slowly add 1/2 cup of sugar, beating until stiff, shiny peaks form.

3In separate bowl, combine coconut, 1/4 cup sugar, almonds, flour and flavoring.

4Mix well.

5Fold coconut mixture into egg whites. Spoon into 12 paper lined muffin tins.

6Bake in preheated 350° oven for 25 minutes or until a little crusty.

7Cool on rack.
