- 1 Tbsp. unflavored gelatin
- 1/4 c. cold water
- 1/2 c. hot water
- 1/2 c. drained, crushed pineapple
- 1/2 c. sugar
- 2 egg whites, stiffly beaten
- 1 c. heavy cream, whipped
- 1 (8 oz.) pkg. macaroon cookies
Directions

1Soften gelatin in cold water. Dissolve in hot water and chill until partially set.

2Line side of an 8-inch square pan with macaroons. Roll remaining macaroons to cover bottom of pan, reserving 1/4 cup crumbs to sprinkle on top.

3Add pineapple to gelatin that has been added to whipped cream.

4Pour into the pan. Top with remaining crumbs and chill thoroughly.

5Serves 9.
