Macaroon Torte

Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1/4 c. cold water
  • 1/2 c. hot water
  • 1/2 c. drained, crushed pineapple
  • 1/2 c. sugar
  • 2 egg whites, stiffly beaten
  • 1 c. heavy cream, whipped
  • 1 (8 oz.) pkg. macaroon cookies

Directions

    Soften gelatin in cold water. Dissolve in hot water and chill until partially set.

    Line side of an 8-inch square pan with macaroons. Roll remaining macaroons to cover bottom of pan, reserving 1/4 cup crumbs to sprinkle on top.

    Add pineapple to gelatin that has been added to whipped cream.

    Pour into the pan. Top with remaining crumbs and chill thoroughly.

    Serves 9.
