Ingredients

  • 4 lbs chicken, cooked (I boil mine, precooked is o.k. Time for this is not included in prep time)
  • 2 tablespoons olive oil
  • 1 lb ground beef
  • 1 lb smoked sausage, cut into quarter inch pieces
  • 2 bay leaves
  • 26 ounces corn and black bean salsa, Walmart brand
  • 26 ounces lime garlic salsa, Walmart brand
  • 3 (16 ounce) cans ranch style beans
  • 12 cup cumin
  • 12 cup chili powder
  • 1 tablespoon sugar
  • 1 tablespoon ketchup

Directions

    Cook and set aside chicken, or open package of cooked chicken and set aside.

    In a medium large pot, heat oil and brown ground beef.

    Add sausage and heat through.

    Add chicken to the beef and sausage mixture and cook for a couple of minutes.

    Add bay leaves, both jars of salsa, beans, spices, sugar and ketchup.

    Cover and simmer for an hour or so.
