Ingredients
- 2 pounds Pickled Mackerel
- 2 cup Cocunut milk or 1 can coconut milk
- 1 cup water
- 2 clove garlic crushed
- 2 stalks escallion chopped finely
- 2 large tomatoes chopped finely
- 4 sprig thyme
- 1 scotch bonnet pepper chopped fine ( optional )
- 1 tablespoon vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 large onion chopped finely
Directions

1To remove the salt from the mackerel soak in water overnight or boil in hot water for 30 minutes

2Drain water off the mackerel and cut into medium size pieces

3Combine milk and water in a frying pan and boil until it looks oily

4Add the mackerel and cover the pot.

5Cook for 10 - 12 minutes on medium heat.

6Add and stir the onions, garlic, escallion, tomatoes, scotch bonnet pepper, thyme and vinegar.

7Add the salt and pepper to taste

8Lower the heat and simmer for 10 minutes.

9Serve with green bananas, yam, roast breadfruit and dumplings.
