- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 2 pkg. (8.5 oz. each) corn muffin mix
- 2 eggs
- 1 can (15 oz.) cream-style corn
- 1 can (15-1/2 oz.) whole kernel corn, drained
- 1/4 cup margarine, melted
- 1 jalapeno pepper, seeded, minced
Directions

1Heat oven to 375 degrees F.

2Blend cottage cheese in blender until smooth; place in large bowl.

3Add remaining ingredients; mix just until blended.

4Pour into 13x9-inch baking dish sprayed with cooking spray.
