  • 1 1/8 cups cake flour
  • 1 teaspoon baking powder
  • 7 3/4 tablespoons butter melted
  • 2 whole eggs
  • 1 egg yolk
  • 3/4 cup sugar
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • salt

    Sieve the flour with the baking powder.

    In a bowl, beat the eggs with the sugar until light and frothy.

    Add the flour mixture, butter, extracts, and a pinch of salt. Mix all the ingredients well until smooth.

    Cover the bowl with plastic wrap and allow to rest in the refrigerator for 2 hours.

    Preheat the oven to 200 degrees Celsius.

    Place a teaspoonful of mixture in each madeleine mold. Chill briefly.

    Bake for 5 to 6 minutes. When they begin to rise, lower the temperature to 180 C and bake for up to 6 minutes until golden brown.
