  • 1 cup sugar
  • 1 teaspoon baking powder
  • 5 egg whites
  • 1 dash salt
  • 1 14 cups graham cracker crumbs
  • 4 ounces sweet baking chocolate, grated
  • 23 cup pecans, chopped and toasted
  • 2 teaspoons vanilla extract, divided
  • 2 teaspoons instant coffee granules
  • 12 teaspoon water
  • 1 cup whipping cream
  • 14 cup powdered sugar, sifted
  • 2 ounces sweet baking chocolate, grated

    Combine 1 cup sugar and baking powder in a small bowl.

    Stir well and set aside.

    Beat egg whites and salt at a high speed of an electric mixer until foamy.

    Gradually add the reserved sugar mixture, 1 tbsp at a time, beating until stif peaks form and the sugar dissloves (2 to 4 minutes).

    Gently fold in graham cracker crumbs, 4 ounces of grated chocolate, pecans, and 1 tsp vanilla.

    Spoon into a buttered 10-inch pie plate.

    Combine the remaining 1 tsp vanilla, coffee granules and water, stirring until the coffee granules dissolve.
