- 9 large baking potatoes, peeled and cut in chunks
- 12 oz. light cream cheese, at room temperature
- 1/2 c. oleo, softened
- 1/2 c. sour cream
- pinch of nutmeg
- 1/4 tsp. white pepper
- 1/2 tsp. salt
Directions

1Cover potatoes with water and bring to boil.

2Reduce to medium heat and simmer until tender.

3Drain and place in a mixing bowl; beat potatoes with mixer until fluffy.

4Cut cream cheese into small pieces and beat in with the oleo.

5Beat in sour cream and seasonings.

6Scrape into buttered casserole dish.

7Cover with plastic wrap.

8Refrigerate.

9Bring to room temperature.

10Reheat at 300°, uncovered, for about 20 minutes.
