Make-Ahead Mashed Potatoes

  • 5 lb. potatoes, peeled and quartered (about 15 medium)
  • 6 oz. Neufchatel cheese
  • 1 c. light sour cream
  • 2 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 egg whites
  • 1 Tbsp. corn oil margarine

Directions

    Cook potatoes.

    Mash until there are no lumps.

    Add Neufchatel cheese, sour cream, onion powder, salt, pepper and egg whites; blend well.

    Place in 9 x 13-inch casserole that has been sprayed with non-stick vegetable spray.

    Dot with margarine.

    If preparing ahead, allow to cool, cover and refrigerate for several days, if desired.

    To serve, bake in preheated 350° oven for 40 minutes. Makes 12 one cup servings.
