Make-Ahead Mashed Potatoes

Ingredients
- 5 lb. potatoes, peeled and quartered (about 15 medium)
- 6 oz. Neufchatel cheese
- 1 c. light sour cream
- 2 tsp. onion powder
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 egg whites
- 1 Tbsp. corn oil margarine
Directions

1Cook potatoes.

2Mash until there are no lumps.

3Add Neufchatel cheese, sour cream, onion powder, salt, pepper and egg whites; blend well.

4Place in 9 x 13-inch casserole that has been sprayed with non-stick vegetable spray.

5Dot with margarine.

6If preparing ahead, allow to cool, cover and refrigerate for several days, if desired.

7To serve, bake in preheated 350° oven for 40 minutes. Makes 12 one cup servings.
