Make-Ahead Mashed Potatoes

  • 5# Baking Potatoes (Russet / Idaho)
  • 8 oz. Pkg Cream cheese, room temperature, cut in chunks
  • 1 cup sour cream
  • 1/2 cup milk, heated
  • Chopped, fresh chives or aprsley

Directions

    Peel potatoes, cut into chunks, cook til tender, 15-20 minutes. DO NOT OVER COOK

    Drain and return to warm pot.

    Add cream cheese & mash w hand mixer until cheese is blended in.

    Beat in soour cream and milk.

    Transfer to buttered 9 x 12 casserole.

    Cool completely. Cover w plastic wrap & refrigerate for up to 1 day.

    Bake in pre-heated 425 degree oven until heated thru - 30-40 minutes.

    Serve hot sprinkled with chives and parsley.
