Ingredients
- 8 slices raw bacon, in 1/2-inch segments
- 14 onion, minced
- 2 garlic cloves, minced
- 2 medium potatoes or 4 small potatoes, 1/4-inch diced
- 12 cup frozen spinach or 12 cup frozen mustard greens
- 12 teaspoon salt
- 1 12 cups rice
- 2 12 cups broth (or water, or a combination)
Directions

1In a skillet that has a tight-fitting lid, over low heat, saute bacon.

2Add onion, garlic, potatoes, and spinach in that order, adding each as it is chopped and ready to go in the pan, continuing to cook over low heat, and stirring occasionally as you go along.

3(Any frozen green vegetable--green beans, peas, broccoli--can be used in place of the spinach.

4I recommend taking this opportunity to try getting those leafy greens into the kids, though.

5With the good bacon flavor in there, and the texture of the rice and potatoes, the greens do not offend!

8Stir in rice and saute for a minute until it is thoroughly combined with other ingredients.

9Add broth/water, and bring to a simmer.

10Once the liquid simmers, put the lid on the skillet and set the timer for 20 minutes, and turn the heat as low as you possibly can.

11While the rice skillet steams, prepare any fresh vegetables or other sides you plan to serve.
