- 1 c. long grain rice
- 1 tomato
- 1 c. mushrooms
- 1 green pepper
- 1 small onion
- 3 Tbsp. butter
- 1 Tbsp. tomato paste
- 1/8 tsp. salt
- dash of cayenne
- 1/4 tsp. curry powder
Directions

1Cook the rice.

2Wash the tomato, mushrooms and green pepper. Cut the mushrooms in half and mince the green pepper. Peel and slice the onion.

3Melt the butter in the skillet and saute the onion until soft.

4Add the other vegetables, tomato paste, salt, cayenne and curry powder.

5Cook for 15 minutes, stirring.

6Stir in the cooked rice and serve.
