  • 1 pound plain flour
  • 6 ounces malt extract
  • 4 ounces brown sugar
  • 2 ounces margarine
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 8 ounces sultanas or currants
  • 1/2 pint soya milk or water

Directions

    Gently heat the margarine, malt and sugar.

    Cool.

    Sift the dry ingredients into a bowl and stir in the malt mixture and the soya milk.

    Add the dried fruit.

    Turn into a greased, floured 2 Lb loaf tin and bake at 325F, gas 3 for an hour and a half.
