  • 1 pie crust, baked
  • 3 eggs (reserve whites)
  • 1 c. sugar
  • 2 Tbsp. butter
  • 1/2 c. milk or water
  • 3 Tbsp. self-rising flour
  • 1 large lemon (juice and grated rind)

Directions

    Beat egg yolks.

    Add other ingredients and cook over hot water until mixture is of jelly-like consistency.

    Pour into pie crust. Cover with meringue and bake in a slow oven at 300° for about 15 minutes.
