Mandarin Pudding With Eggs

  • 1 1/3 tablespoons pudding Mandarin
  • 4 eggs
  • 4 1/4 cups milk
  • 8 teaspoons sugar

    Pour the milk in a tall saucepan and heat. Set aside a small portion of the milk to dissolve the pudding.

    In a bowl, dissolve the pudding powder in the milk and egg yolks. Whisk well.

    Whisk the egg whites with a pinch of fine salt, to stiff peaks.

    Caramelize a bundt pan.

    When the milk is almost at the boiling point, add the pudding mix with the yolks.

    Whisk until there are no more lumps. Boil for 3 to 4 minutes.

    Remove from heat, and add the whisked egg whites little by little, mixing energetically in order to get a homogeneous mixture.

    Pour the pudding in the caramelized bundt pan.

    Allow to cool slightly, then refrigerate to solidify, preferably overnight.

    Unmold into a deep serving platter.
