Mandarin Pudding With Eggs

- 1 1/3 tablespoons pudding Mandarin
- 4 eggs
- 4 1/4 cups milk
- 8 teaspoons sugar
Directions

1Pour the milk in a tall saucepan and heat. Set aside a small portion of the milk to dissolve the pudding.

2In a bowl, dissolve the pudding powder in the milk and egg yolks. Whisk well.

3Whisk the egg whites with a pinch of fine salt, to stiff peaks.

4Caramelize a bundt pan.

5When the milk is almost at the boiling point, add the pudding mix with the yolks.

6Whisk until there are no more lumps. Boil for 3 to 4 minutes.

7Remove from heat, and add the whisked egg whites little by little, mixing energetically in order to get a homogeneous mixture.

8Pour the pudding in the caramelized bundt pan.

9Allow to cool slightly, then refrigerate to solidify, preferably overnight.

10Unmold into a deep serving platter.
