- 1/3 c. long grain rice
- 1 beaten egg yolk
- 1/4 tsp. finely shredded orange peel
- 2 Tbsp. orange juice
- 2 Tbsp. sugar (use artificial substitute for sugar)
- 1/4 tsp. salt
- 1 tsp. vanilla
- 3 egg whites
- 1/4 tsp. cream of tartar
- 2 Tbsp. sugar (use artificial substitute for sugar)
- 1 (11 oz.) can mandarin orange sections, chilled and drained
Directions

1In medium saucepan, combine milk and rice.

2Bring to boiling. Reduce heat; cook, covered, over low heat for 20 minutes, stirring occasionally.

3Uncover; cook the rice mixture for 5 minutes more.
