Ingredients
- 1 (11 oz.) can mandarins, drained
- 4 to 5 eggs, separated
- 3 Tbsp. margarine
- 1/4 to 1/2 tsp. grated mandarin peel
- 1 Tbsp. Mandarin Napoleon or Grand Marnier liqueur
- 2 to 3 Tbsp. sugar
- 1/4 c. sugar
- 3 Tbsp. all-purpose flour
Directions

1Put mandarins in blender and process until smooth.

2Add enough sugar to sweeten.

3Whip egg whites until stiff.

4Gradually add 1/4 cup sugar, continue beating until whites form soft peaks.

5Melt the margarine in a saucepan, stir in the flour.

6Blend mandarins into the margarine and flour.

7Cook until thickened, stirring constantly.

8Remove from heat, add the egg yolks, grated mandarin peel and liqueur.

9Carefully fold the whites into the souffle.
