  • 2 c. flour
  • 1/2 tsp. salt
  • 2 c. diced mangoes
  • 2 tsp. soda
  • 1 1/4 c. sugar
  • 1/4 c. walnuts, chopped
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 c. coconut
  • 3/4 c. cooking oil
  • 3 eggs

Directions

    Sift salt, flour, soda and cinnamon together.

    Make well in dry ingredients.

    Add eggs, oil, vanilla, sugar, nuts, coconut and mangoes; mix well.

    Put into 2 well-greased 8 x 4 x 2-inch loaf pans.

    Let stand 20 minutes before baking at 350° for 1 hour.
