- 1/2 tsp. salt
- 2 c. diced mangoes
- 2 tsp. soda
- 1 1/4 c. sugar
- 1/4 c. walnuts, chopped
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 1/2 c. coconut
- 3/4 c. cooking oil
- 3 eggs
Directions

1Sift salt, flour, soda and cinnamon together.

2Make well in dry ingredients.

3Add eggs, oil, vanilla, sugar, nuts, coconut and mangoes; mix well.

4Put into 2 well-greased 8 x 4 x 2-inch loaf pans.

5Let stand 20 minutes before baking at 350° for 1 hour.
