Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 - 1 1/2 cup sugar
- 3 eggs
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 1/2 cup macadamia nuts, chopped
- 1/2 cup golden raisin
- 1 - 1 1/2 cup fresh mango, diced
- 1/4 cup flaked coconut, unsweetened
Directions

1Sift flour, baking soda, salt, cinnamon and sugar in a large bowl.

2Make a well in center of dry ingredients and then add the eggs, oil, and vanilla and blend well.

3Gently stir in the nuts, raisins, mango and coconut.

4Pour into greased loaf pan and let stand 20 minutes.

5Bake at 350 degrees for 1 hour to 1 hr and 15 minutes or until done (verifying with a toothpick test in the center).

6Let stand 10 minutes before removing from pan and allowing to cool completely on a wire rack before serving/cutting.
