Mango Caramel Sauce

- 3/4 cup sugar
- 1/2 cup mango juice
- 1/2 vanilla bean, split length-wise, pulp scraped
- 2 teaspoons freshly squeezed lemon juice, or to taste
Directions

1In a small saucepan over medium heat, combine the sugar with 3/4 cup water.

2Bring to a simmer and cook until the sugar is dissolved, about 5 minutes.

3Add the mango juice and stir until incorporated.

4Add the vanilla bean and pulp and simmer for 2 minutes to bring out the flavor.

5Add the lemon juice, taste, and add more lemon juice if needed.

6The sauce should be a pourable consistency; if its too thick, add a little water.

7Remove the vanilla bean before using.
