Mango Caramel Sauce

- 1 ripe mango, peeled, pitted and coarsely chopped
- 1 cup sugar
- 1/2 cup water
- 1/2 cup heavy cream
Directions

1Place the mango in a food processor and process until smooth.

2Pass the mixture through a strainer into a bowl.

3Combine the sugar and water in a small saucepan over high heat and cook until dark amber brown.

4Slowly add the heavy cream and mango puree and whisk until smooth.

5Transfer to a bowl and let cool slightly.

6Cook's Note: this sauce is great on ice cream, pound cake and angel food cake.
